Description

This Greek Yogurt Green Goddess Dressing is a fresh and creamy sauce bursting with the flavors of fresh herbs, tangy lemon, and a hint of honey. Made with plain Greek yogurt, it offers a healthier alternative to traditional dressings, perfect for salads, dipping, or drizzling over grilled vegetables and proteins.

Ingredients

Herbs and Aromatics

  • ¼ cup fresh parsley leaves
  • ¼ cup fresh basil leaves
  • 3 tbsp fresh chives
  • 1 small garlic clove

Wet Ingredients

  • ½ cup plain Greek yogurt (2% fat)
  • 2-3 tbsp lemon juice (juice of approx. 1 medium lemon)
  • 1 tbsp extra-virgin olive oil
  • 1 tsp Dijon mustard
  • 1-2 tsp honey
  • 1-2 tbsp water (added to achieve desired consistency)

Seasonings

  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper (or to taste)

Instructions

  1. Chop Herbs and Garlic: Add the parsley, basil, chives, and the small garlic clove into a high-speed blender or small food processor. Use the “chop” setting or pulse several times until the herbs and garlic are finely chopped.
  2. Add Wet Ingredients and Blend: Add the Greek yogurt, lemon juice, extra-virgin olive oil, Dijon mustard, and honey to the food processor with the chopped herbs. Blend again until the mixture is smooth and creamy. Taste the dressing and season with salt and black pepper according to your preference, adjusting any other ingredients if needed.
  3. Adjust Consistency: Add 1 to 4 tablespoons of water, one tablespoon at a time, while blending to thin the dressing to your desired consistency. Once smooth and well combined, transfer the Greek Yogurt Green Goddess Dressing into a jar or container for serving or storage.

Notes

  • Use fresh herbs for the best flavor; dried herbs will not provide the same vibrant taste.
  • The dressing can be stored in an airtight container in the refrigerator for up to 5 days.
  • Adjust the amount of honey based on desired sweetness.
  • If you prefer a thicker dressing, reduce the amount of water added.
  • This dressing works well as a salad dressing, dip, or sauce for grilled meats and vegetables.
