Description

This Gluten-Free Overnight Yeast Waffles recipe features a light and airy waffle batter that ferments overnight for enhanced flavor and texture. Using gluten-free flour and a warm milk-butter mixture, these waffles are effortless to prepare ahead of time and perfect for a cozy breakfast or brunch that everyone can enjoy.

Ingredients

Wet Ingredients

  • 3½ cups milk of choice
  • ½ cup (113g) butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 3¾ cups (562g) gluten-free measure-for-measure flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon instant yeast
  • 1 teaspoon kosher salt

Instructions

  1. Heat Milk and Butter: In a medium saucepan, combine the milk and melted butter. Warm over medium heat until the butter has fully melted and the mixture is warm to the touch but not boiling or simmering.
  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs and vanilla extract. Gradually pour the warm milk and butter mixture into the eggs while whisking continuously to temper the eggs and avoid scrambling.
  3. Add Dry Ingredients: Add the gluten-free flour, granulated sugar, instant yeast, and kosher salt to the wet mixture. Stir gently until all ingredients are well combined and no dry streaks of flour remain.
  4. Refrigerate Overnight: Cover the bowl with plastic wrap or a lid and refrigerate the batter for at least 8 hours and up to 2 days to allow the yeast to ferment, resulting in fluffy waffles with enhanced flavor.
  5. Prepare Oven and Rack: The next day, preheat your oven to 200°F (93°C). Place a wire rack on a large baking sheet to keep waffles warm and crispy after cooking.
  6. Preheat Waffle Iron: Heat your waffle iron according to the manufacturer’s instructions. Lightly spray the inside of the waffle iron with non-stick cooking spray to prevent sticking.
  7. Cook Waffles: Scoop batter onto the preheated waffle iron and cook until golden brown and crispy, following your waffle maker’s recommended cooking time.
  8. Serve or Keep Warm: Serve waffles immediately for the best texture, or place cooked waffles on the wire rack in the warm oven to keep them crispy and warm until ready to serve.

Notes

  • Make sure the milk-butter mixture is warm but not hot to avoid cooking the eggs when mixed.
  • Use a gluten-free measure-for-measure flour blend designed for baking to ensure the best texture.
  • Batter can be refrigerated for up to 2 days allowing for flexible meal prepping.
  • Keep cooked waffles on a wire rack in a low oven to maintain crispness.
  • You can customize your waffles by adding cinnamon, nutmeg, or your favorite mix-ins before cooking.
