Description

These flavorful Flank Steak Tacos feature marinated flank steak grilled to perfection and served on corn tortillas with fresh toppings like homemade Mexican salsa, red onion, avocado, iceberg lettuce, sour cream, cilantro, and queso fresco. This recipe balances smoky spices and zesty lime, making for a delicious and satisfying taco night.

Ingredients

Spice Rub

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt

Steak and Marinade

  • 2 lb flank steak
  • 2-3 garlic cloves, pressed
  • 1/4 cup olive oil
  • Juice of 1 lime

Toppings (Optional)

  • Homemade Mexican salsa
  • Red onion, sliced
  • Avocado, sliced
  • Iceberg lettuce, shredded
  • Sour cream
  • Cilantro, fresh leaves
  • Queso fresco, crumbled
  • Corn tortillas

Instructions

  1. Mix Spices: Combine the chili powder, cumin, and salt in a small bowl to create the spice rub.
  2. Rub Steak: Generously coat both sides of the flank steak evenly with the spice mixture, ensuring full coverage for flavor.
  3. Prepare Marinade: In another bowl, whisk together the pressed garlic, olive oil, and lime juice until well combined to form the marinade.
  4. Marinate Steak: Place the seasoned flank steak in a large bowl, pour the garlic-lime marinade over it, then cover with plastic wrap. Refrigerate for 2 to 4 hours to allow the flavors to penetrate the meat.
  5. Grill Steak: Preheat your grill to high heat. Remove the steak from the marinade and grill it to your preferred doneness, about 4-5 minutes per side for medium-well. Once done, take the steak off the grill and cover it loosely with foil to rest for about 10 minutes, preserving juices.
  6. Slice Steak and Assemble Tacos: Cut the rested steak into thin strips against the grain. Warm corn tortillas and fill them with the steak strips. Add your favorite toppings such as homemade Mexican salsa, red onion, avocado, iceberg lettuce, sour cream, cilantro, and queso fresco for a complete taco experience.

Notes

  • Marinate the steak for at least 2 hours but no more than 4 to avoid the acid from the lime juice breaking down the meat texture excessively.
  • Cutting the steak against the grain ensures tender bites.
  • Feel free to substitute corn tortillas with flour tortillas if preferred.
  • Additional toppings like pickled jalapeños or radish slices can add extra flavor and crunch.
  • Letting the steak rest after grilling helps retain moisture and flavor.
