Description

A light and healthy Egg White Breakfast Sandwich featuring toasted bagel thins layered with fluffy cooked egg whites, fresh spinach, juicy tomato slices, creamy avocado, melted mozzarella cheese, and tangy tomatillo salsa. Perfect for a nutritious and satisfying morning meal.

Ingredients

Sandwich Components

  • 4 bagel thins (Everything Bagel Thins recommended)
  • 8 egg whites
  • 1 cup fresh spinach
  • 1 medium tomato, sliced
  • 1 avocado, sliced
  • 4 slices mozzarella cheese
  • 4 tablespoons tomatillo salsa

Instructions

  1. Toast Bagels: Toast the 4 bagel thins to your preferred level of crispness using a toaster or toaster oven to add a crunchy texture to the sandwich.
  2. Cook Egg Whites: Heat a small skillet over medium heat. Pour in the egg whites, cooking them like fried eggs. Cook in two batches, two egg whites at a time, until they are set and cooked through without browning.
  3. Assemble Sandwich: Place the bottom halves of the toasted bagel thins on plates. Layer each with an equal portion of fresh spinach, cooked egg whites, tomato slices, avocado slices, a slice of mozzarella cheese, and finish with one tablespoon of tomatillo salsa. Top each sandwich with the remaining bagel halves and serve immediately.

Notes

  • You can substitute bagel thins with whole wheat English muffins or sandwich thins for variety.
  • Use pasteurized egg whites for convenience and safety.
  • For a vegan version, replace egg whites with tofu slices and mozzarella with vegan cheese.
  • Tomatillo salsa adds a fresh, tangy flavor but can be replaced with your favorite salsa or hot sauce.
  • Cook egg whites gently to avoid overcooking and keep them tender.
