Topped with optional whipped cream or ice cream, this delightful dessert offers a perfect balance of sweet and tangy flavors, ideal for a comforting summer treat.

Ingredients

Strawberry Filling

  • 5 cups fresh strawberries, hulled and quartered
  • 4 tsp all purpose flour
  • 1/4 cup granulated sugar
  • Squeeze of lemon juice

Lemon Biscuit Topping

  • 1 1/2 cups all purpose flour
  • 1/3 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 Tbsp lemon zest
  • 6 Tbsp butter, melted
  • 1/2 cup heavy whipping cream
  • 1/4 cup fresh lemon juice
  • Raw sugar, for sprinkling (optional)

Optional Toppings

  • Whipped Cream (favorite recipe linked below)
  • Ice Cream
  • Fresh Strawberries

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Grease a deep dish 9-inch or 10-inch pie plate, or alternatively use a 9×9 or 9×13-inch baking dish for the cobbler.
  2. Prepare strawberry filling: In a mixing bowl, combine the strawberries with 4 teaspoons of all-purpose flour, 1/4 cup granulated sugar, and a squeeze of fresh lemon juice. Toss gently to coat. Spread this mixture evenly in the bottom of the prepared baking dish.
  3. Mix dry biscuit ingredients: In another bowl, whisk together 1 1/2 cups all-purpose flour, 1/3 cup granulated sugar, 2 1/2 teaspoons baking powder, 1/4 teaspoon salt, and 1 tablespoon lemon zest until evenly combined.
  4. Combine wet and dry biscuit ingredients: Make a well in the center of the dry ingredients and pour in the melted butter, 1/2 cup heavy whipping cream, and 1/4 cup fresh lemon juice. Stir gently until all ingredients come together to form a biscuit dough.
  5. Top the strawberries with biscuit dough: Using a spoon, drop dollops of the biscuit dough evenly over the strawberry filling. Optionally, sprinkle raw sugar over the top for added crunch and sweetness.
  6. Bake the cobbler: Place the baking dish in the preheated oven and bake for 40-45 minutes or until the biscuit topping is golden brown and the strawberry filling is bubbling around the edges.
  7. Cool before serving: Remove the cobbler from the oven and allow it to cool for a few minutes so the filling sets slightly.
  8. Serve with toppings: Serve the cobbler warm, topped with whipped cream or ice cream as desired. Fresh strawberries can also be added as garnish.
  9. Store leftovers: Refrigerate any leftovers in an airtight container and consume within 2-3 days for best freshness.

Notes

  • Use fresh, ripe strawberries for the best flavor and sweetness.
  • If fresh strawberries are unavailable, frozen strawberries can be used but may release more liquid; consider reducing added liquid accordingly.
  • For a lighter topping, substitute heavy cream with buttermilk or milk.
  • Raw sugar sprinkled on top adds a nice crunchy texture but can be omitted if desired.
  • Leftover cobbler can be reheated gently in the microwave or oven before serving.
  • Customize toppings with your favorite ice cream flavors or whipped cream variations.
