Description

This easy ratatouille recipe features layers of tender, vibrant vegetables baked in a rich tomato sauce base, enhanced with aromatic herbs and garlic-infused olive oil. Perfect as a healthy side or a light main dish, this classic French Provençal vegetable medley is simple to prepare and bursting with fresh, comforting flavors.

Ingredients

Tomato Sauce Base

  • 2 tablespoons olive oil (30ml)
  • 1 medium yellow onion, finely diced (150g)
  • 4 cloves garlic, minced (12g)
  • 1 red bell pepper, finely diced (150g)
  • 1 tablespoon tomato paste (16g)
  • 1 1/2 cups marinara sauce (360ml)
  • 1 teaspoon dried thyme (1g)
  • 1 teaspoon dried oregano (1g)
  • 1/2 teaspoon dried rosemary, crushed (0.5g)
  • 1/2 teaspoon fine sea salt, or to taste (3g)
  • 1/4 teaspoon freshly ground black pepper (0.5g)

Vegetables

  • 1 small eggplant, thinly sliced into 1/8-inch rounds (350g)
  • 2 medium zucchini, thinly sliced into 1/8-inch rounds (400g)
  • 2 medium yellow squash, thinly sliced into 1/8-inch rounds (400g)
  • 3 Roma tomatoes, thinly sliced into 1/8-inch rounds (360g)

Herb Oil

  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon fresh parsley, finely chopped (4g)
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme (1g)
  • 1 clove garlic, finely grated (3g)
  • Pinch of fine sea salt (0.5g)
  • Freshly ground black pepper, to taste (0.5g)

Instructions

  1. Prepare the sauce: Preheat your oven to 375°F (190°C). Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 5 to 6 minutes until softened and translucent. Then, add the minced garlic and diced red bell pepper, cooking for another 4 to 5 minutes until the pepper softens and garlic is fragrant. Stir in the tomato paste, cooking for about 1 minute to evenly combine. Pour in the marinara sauce and add the dried thyme, oregano, crushed rosemary, salt, and black pepper. Simmer gently for 8 to 10 minutes, stirring occasionally until slightly thickened. Spread this tomato sauce evenly over the bottom of a 9-inch round or similar-sized baking dish.
  2. Arrange the vegetables: Slice the eggplant, zucchini, yellow squash, and Roma tomatoes into approximately 1/8-inch thick rounds for even cooking. Arrange these slices over the sauce in alternating patterns (eggplant, zucchini, yellow squash, tomato), slightly overlapping each piece, forming concentric circles or rows until the dish is fully covered.
  3. Prepare the herb oil: In a small bowl, mix together 2 tablespoons olive oil, chopped fresh parsley, fresh thyme leaves, grated garlic, a pinch of sea salt, and freshly ground black pepper. Brush or drizzle this aromatic herb oil evenly over the arranged vegetables, ensuring it seeps between layers for maximum flavor.
  4. Bake the ratatouille: Cover the baking dish tightly with aluminum foil to trap steam and bake for 30 minutes. Remove the foil carefully and bake uncovered for an additional 20 to 30 minutes until the vegetables are tender and edges lightly browned. For extra browning, broil uncovered for 2 to 3 minutes at the end but watch closely to prevent burning.
  5. Rest and serve: Remove the ratatouille from the oven and let it rest for about 10 minutes before serving. This resting period helps the vegetables to settle and the flavors to meld perfectly.

Notes

  • Ensure all vegetable slices are uniform in thickness to promote even cooking.
  • Covering the dish with foil during the initial bake helps the vegetables steam and become tender without drying out.
  • Broiling at the end adds a nice caramelized finish—watch carefully to avoid burning.
  • Ratatouille can be served warm or at room temperature and pairs well with crusty bread or as a side to grilled meats.
  • Use fresh herbs if available for a more vibrant flavor, but dried herbs work well too.
