Ingredients

Pasta

  • 12 ounces whole wheat or gluten-free macaroni

Sauce

  • 1 tablespoon vegetable or olive oil
  • 1/4 teaspoon nutmeg
  • 15 ounces canned pure pumpkin puree
  • 2 cups milk of choice
  • 8 ounces sharp cheddar cheese, shredded
  • Kosher salt and pepper to taste

Toppings

  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon chili flakes (or to taste)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain the pasta and rinse briefly under cold water to stop the cooking process, then set aside.
  2. Preheat the Oven: Set your oven to 375ºF (190ºC) to prepare for baking the mac and cheese later.
  3. Make the Pumpkin Sauce: Heat the vegetable or olive oil in a deep pan over medium heat. Add the nutmeg and sauté for about 20 seconds until fragrant. Stir in the pumpkin puree and milk, whisking continuously until the sauce is smooth and begins to bubble gently.
  4. Add Cheese and Season: Reduce the heat to low and stir in the shredded cheddar cheese. Continue stirring until all the cheese has melted completely, then season the sauce with kosher salt and pepper to your taste. Remove the pan from heat.
  5. Combine Pasta and Sauce: Add the cooked macaroni to the pumpkin cheese sauce and mix well to ensure every piece of pasta is coated beautifully.
