Description

This Easy Pumpkin Banana Bread combines ripe bananas and creamy pumpkin puree to create a moist, flavorful quick bread. Made with a spice cake mix for convenience, it blends fall-inspired spices and natural sweetness into a delicious treat perfect for breakfast, snacks, or dessert.

Ingredients

Wet Ingredients

  • 3 Bananas, ripe and mashed
  • 1/2 cup Pumpkin puree (not pumpkin pie filling)
  • 3 Large eggs, room temperature
  • 1/2 cup Oil

Dry Ingredients

  • 1 box (15.25 oz) Spice cake mix

Instructions

  1. Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, eggs, and oil. Stir until the mixture is smooth and evenly blended.
  2. Add Dry Ingredients: Gradually add the spice cake mix to the wet ingredients. Mix gently until just combined; avoid over-mixing to ensure the bread stays tender.
  3. Prepare Pans: Grease and flour two loaf pans measuring 8×4 inches each to prevent sticking.
  4. Pour Batter: Evenly divide the batter between the two prepared loaf pans, smoothing the tops.
  5. Bake: Preheat the oven to 350°F (177°C). Bake the loaves for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  • Use ripe bananas for maximum sweetness and moisture.
  • Do not substitute pumpkin puree with pumpkin pie filling, as it contains added sugars and spices that may alter the flavor.
  • Allow the bread to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • You can add nuts or chocolate chips for extra texture if desired.
  • Store leftovers wrapped tightly at room temperature for up to 3 days, or freeze for longer storage.
