Ingredients
Chicken
- 3 lbs boneless skinless chicken breast, cut thinner (or boneless skinless chicken thighs)
Marinade
- 1/2 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lime juice
- 2 Tbsp olive oil
- 1 ½ Tbsp achiote powder (ground annatto)
- 2 ½ tsp salt
- 1 tsp ground black pepper
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp onion powder
- 2 tsp dried oregano
- ⅛ tsp ground cloves
- 6 garlic cloves, minced (or 1 ½ tsp garlic powder)
Instructions
- Prepare Marinade: In a bowl, whisk together all the marinade ingredients until fully combined, ensuring the achiote powder and spices are evenly mixed with the citrus juices and olive oil.
