Ingredients

Citrus syrup:

  • ⅔ cup fresh orange juice
  • ¼ cup fresh lemon juice
  • ⅓ cup brown sugar (packed)
  • ½ teaspoon grated orange zest
  • ½ teaspoon grated lemon zest
  • 1 teaspoon vanilla extract

Fruit salad:

  • 2 cups cubed fresh pineapple
  • 2 cups strawberries (hulled and quartered)
  • 3 kiwi fruit (peeled and sliced)
  • 6 ounces blackberries
  • 2 oranges (peeled and sectioned)
  • 1 cup seedless red grapes (halved)
  • 2 cups blueberries


Instructions

  1. Make the citrus syrup: In a medium saucepan over medium heat, bring together the orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil.
  2. Simmer the syrup: Reduce the heat to medium-low and let the mixture simmer, stirring occasionally, until it slightly thickens, about 5 minutes.
  3. Add vanilla and cool: Remove the saucepan from heat and stir in the vanilla extract, then set the syrup aside to cool completely.
  4. Prepare the fruit: In a large bowl, combine the cubed pineapple, hulled and quartered strawberries, sliced kiwi, blackberries, peeled and sectioned oranges, halved grapes, and blueberries.
  5. Toss fruits with syrup: Pour the cooled citrus-vanilla syrup over the mixed fruits and gently toss to evenly coat all the fruit pieces.
  6. Chill before serving: Cover the bowl and refrigerate the fruit salad for 3 to 4 hours to allow flavors to meld and the salad to chill thoroughly before serving.
