Description

This Easy Banana Mug Cake is a quick and delicious single-serving dessert made by combining simple pantry ingredients with a ripe banana. Ready in just 6 minutes using a microwave, this moist and flavorful cake is perfect for a fast treat or snack, topped with banana slices and chocolate chips for extra indulgence.

Ingredients

Dry Ingredients

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon kosher salt
  • 2 tablespoons brown sugar

Wet Ingredients

  • 1/2 overripe banana
  • 1 tablespoon vegetable oil
  • 1 tablespoon milk

Add-ins and Garnish

  • 1 tablespoon chocolate chips (plus more for garnish)

Instructions

  1. Mash the Banana: Peel half of an overripe banana and mash it thoroughly in a small bowl until smooth. If the remaining banana is firm, set aside slices for garnish later.
  2. Combine Ingredients: Transfer the mashed banana into a microwave-safe mug. Add vegetable oil, milk, brown sugar, all-purpose flour, baking powder, cinnamon, and kosher salt. Stir well until the mixture is smooth and evenly combined.
  3. Add Chocolate Chips: Fold in one tablespoon of chocolate chips to the batter to add bursts of melted sweetness.
  4. Scrape Batter: Use a spatula to scrape any batter stuck on the sides of the mug into the center to ensure even cooking.
  5. Microwave Cooking: Place the mug in the microwave and cook on high power for 80 seconds. The cake should rise and set but remain moist.
  6. Garnish and Serve: Remove the mug from the microwave and top the cake with the reserved banana slices and additional chocolate chips as desired. Serve warm and enjoy!

Notes

  • For best results, use a very ripe banana as it adds natural sweetness and moisture.
  • You can substitute vegetable oil with melted butter or coconut oil for different flavor profiles.
  • If you prefer a dairy-free version, use plant-based milk.
  • Cooking time may vary slightly depending on microwave wattage; adjust accordingly.
  • Use a large microwave-safe mug to prevent overflow during cooking.
