Description
This Easy 30-Minute Instant Pot Turmeric Rice recipe is a flavorful and aromatic dish that combines brown jasmine rice with coconut milk, turmeric, and garlic for a deliciously creamy and vibrant side. Perfectly cooked in your Instant Pot, it offers a quick, hands-off way to prepare a healthy and colorful rice dish with a subtle hint of spice and richness from ghee and coconut milk.
Ingredients
Ingredients
- 2 cups brown jasmine rice (uncooked and rinsed)
- 2 tablespoons ghee
- 1 can coconut milk (full-fat and unsweetened, about 13.5 oz)
- 1 cup vegetable broth (or water)
- 4 cloves garlic (minced)
- ½ teaspoon salt
- 1 ½ teaspoons turmeric powder
Instructions
- Add Ingredients: Place the rinsed brown jasmine rice, ghee, full-fat unsweetened coconut milk, vegetable broth or water, minced garlic, salt, and turmeric powder into the Instant Pot. Make sure all ingredients are evenly distributed.
- Seal and Cook: Securely close the Instant Pot lid and set the steam release valve to the sealing position. Select the Pressure Cook function, choose High Pressure, and set the cooking time for 5 minutes.
- Natural Pressure Release: Once the cooking cycle finishes, allow the Instant Pot to naturally release pressure for 10 minutes without opening the valve. This helps the rice finish cooking gently and absorb the flavors.
- Quick Release and Fluff: After the natural release period, carefully perform a quick pressure release by moving the valve to venting. Once the pressure is fully released and the lid is safe to open, open the lid and fluff the rice gently with a fork before serving.
Notes
- Rinsing the brown jasmine rice before cooking helps remove excess starch and results in fluffier rice.
- Using ghee adds a rich, buttery flavor but can be substituted with oil or butter if preferred.
- For a lighter version, use light coconut milk or adjust the amount of ghee.
- If you don’t have vegetable broth, water works equally well, though broth adds more depth of flavor.
- Can be served as a side dish with curries, grilled vegetables, or proteins.
- Make sure the lid is properly secured before pressure cooking to avoid steam leaks.
