Ingredients
Polenta Base

Instructions
- Prepare Polenta: Whisk 1/2 cup cornmeal, 1 1/2 cups water, and 1/2 teaspoon kosher salt together in a medium saucepan. Place over medium to medium-high heat and bring to a boil.
- Cook Polenta: Stir almost constantly for 15-20 minutes until the polenta thickens thoroughly and becomes very sticky.
- Add Flavorings: Stir in 2 tablespoons grated parmesan cheese, 1/4 teaspoon garlic powder, and 1/4 teaspoon Italian seasoning to the thickened polenta.
- Set Polenta: Remove the polenta from heat and transfer it onto plastic wrap or a baking dish coated with olive oil or cooking spray. Shape it into a rectangle approximately 1/2 inch thick, then wrap tightly with plastic wrap.
- Chill Polenta: Place the wrapped polenta in the refrigerator until completely cooled and firm.
- Preheat Oven: Preheat your oven to 450°F (232°C).
- Cut Croutons: Unwrap the chilled polenta and cut it into 1/2 inch cubes.
- Prepare Baking Sheet: Arrange the polenta cubes in a single layer on a baking sheet coated with olive oil or cooking spray. Spray the tops of the cubes lightly with additional olive oil or cooking spray.
- Bake Croutons: Bake for 25-30 minutes, turning the cubes every 8-10 minutes to ensure even browning and crispiness.
