Ingredients
Mascarpone Mixture
- 15.87 oz Mascarpone cheese
- 1 tsp Vanilla extract
- 1/2 cup Pumpkin puree
- 2/3 cup Granulated sugar
- 1/3 cup Brown sugar
- 2 tsp Pumpkin pie spice
- 1/4 tsp Kosher salt
Whipping Cream
- 2 cups Heavy cream (cold)
Other Ingredients
- 28 Ladyfingers
- 2 cups Coffee (espresso or strong coffee, cooled)
- Cocoa powder for dusting
Instructions
- Prepare Coffee: Brew the espresso or strong coffee and set it aside to cool completely as you prepare the mascarpone cream.
- Mix Mascarpone Base: In a large mixing bowl, combine mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Use an electric hand mixer to blend until everything is well combined and smooth.
- Add Pumpkin Puree: Incorporate the pumpkin puree into the mascarpone mixture and blend thoroughly until the mixture is homogenous.
- Whip the Cream: Pour in the cold heavy cream and whip the mixture for 3-4 minutes until it thickens and reaches a creamy, stable consistency.
- Soak Ladyfingers: Quickly dip each ladyfinger into the cooled coffee for 1-2 seconds to soak without becoming soggy. Arrange a single layer of soaked ladyfingers evenly in a 13 by 9 inch baking dish.
- Layer Cream: Spread half of the mascarpone-pumpkin cream mixture over the ladyfinger layer, smoothing it out evenly with a spatula.
- Add Second Layer: Dip and place another layer of ladyfingers soaked in coffee atop the mascarpone layer.
- Pipe Cream Topping: Transfer the remaining mascarpone mixture into a piping bag fitted with a star tip. Pipe dollops evenly over the second ladyfinger layer for a decorative finish.
- Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours to allow the flavors to meld and the ladyfingers to soften.
- Serve: Before serving, generously dust the top with cocoa powder and enjoy this creamy pumpkin-infused tiramisu dessert.
Notes
- Use cold heavy cream to achieve better whipping results.
- Dip ladyfingers briefly to prevent them from becoming too soggy and losing structure.
- Refrigerating for at least 4 hours enhances texture and allows flavors to meld.
- Espresso lends a more intense flavor, but strong brewed coffee works well as an alternative.
- For additional garnish, consider adding a sprinkle of cinnamon or nutmeg along with cocoa powder.
