Description

A savory and flavorful Mushroom Rice recipe featuring caramelized cremini mushrooms, aromatic garlic, and thyme-infused long grain rice cooked to perfection in chicken broth for a comforting side dish that pairs well with various main courses.

Ingredients

For Mushroom Rice

  • 2 tablespoons butter (divided)
  • 2 tablespoons olive oil (divided)
  • 4 cloves garlic (minced, divided)
  • 1 pound cremini mushrooms (sliced)
  • 1 small yellow onion (diced)
  • 1½ cups uncooked long grain rice
  • 1 teaspoon fresh thyme
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper
  • 2½ cups low-sodium chicken broth (can substitute vegetable or beef broth or water)
  • ¼ cup chopped green onions

Instructions

  1. Sauté the garlic: In a large pan, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Add half of the minced garlic and cook for 15 seconds until fragrant.
  2. Cook the mushrooms: Add the sliced cremini mushrooms to the pan and cook for 8 minutes, stirring frequently until they become caramelized and tender. Transfer mushrooms to a plate, cover, and set aside.
  3. Sauté the aromatics: In the same pan, heat the remaining butter and olive oil. Add the diced yellow onion and cook for 3 minutes until softened. Stir in the remaining minced garlic and cook for an additional 10 seconds.
  4. Add the rice: Stir in the uncooked long grain rice, fresh thyme, salt, and pepper. Cook for 30 seconds to toast the rice slightly.
  5. Stir in the broth and cook: Pour in ½ cup of broth and scrape the browned bits from the bottom of the pan with a wooden spoon. Add the remaining broth and bring the mixture to a simmer. Reduce heat to low, cover, and cook for 15 to 17 minutes or until the liquid is fully absorbed.
  6. Combine and set aside: Remove the pan from heat. Stir in the caramelized mushrooms and chopped green onions. Cover the pan with a lid and let it rest for 10 minutes to allow flavors to meld.
  7. Serve: Fluff the mushroom rice gently with a fork or rice paddle and serve warm as a delicious side dish.

Notes

  • You can substitute the chicken broth with vegetable or beef broth, or even water, depending on your preference or dietary needs.
  • For a richer flavor, consider adding a splash of white wine when toasting the rice.
  • Make sure not to lift the lid while cooking the rice to ensure even steaming and proper absorption of the broth.
  • This dish pairs wonderfully with grilled meats, roasted vegetables, or even as a hearty base for sautéed greens.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
