Ingredients
Chicken
- 4 boneless, skinless chicken breasts (about 1 pound total)
- Cooking spray
- Salt and freshly ground pepper, to taste
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried parsley
- 1/2 teaspoon sweet paprika
- 1/2 cup grated Parmesan cheese
Sauce
- 1 tablespoon olive oil
- 2 tablespoons butter, divided
- 10 cloves garlic
- 1/2 cup low sodium chicken broth (or white wine)
- 1 cup heavy cream
- Fresh chopped parsley, for garnish
Instructions
- Prepare the chicken: Pound the chicken breasts to an even thickness of 1 inch. Generously spray each chicken breast with cooking spray and set aside.
- Season the chicken: In a mixing bowl, combine Parmesan cheese, salt, pepper, Italian seasoning, basil, parsley, and sweet paprika. Rub this seasoning mixture all over the chicken breasts evenly.
- Sear the chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 minutes on one side. Flip and cook for an additional 5 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the pan and keep covered.
- Cook the garlic: Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the garlic cloves and cook while stirring often for 3 to 4 minutes, until garlic is lightly browned but not burnt.
- Deglaze: Pour in the chicken broth or white wine and cook for 3 minutes, allowing the liquid to reduce and incorporate all the browned bits from the pan.
- Make the sauce and finish cooking chicken: Stir in the heavy cream, then add the chicken breasts back to the skillet. Cook together for another 5 minutes, letting the sauce thicken slightly and the chicken finish cooking through.
- Serve: Remove from heat, garnish with fresh chopped parsley, and serve immediately for a creamy, garlicky delight.
Notes
- For an even richer flavor, you can substitute half the heavy cream with half-and-half.
- If preferred, white wine can be used instead of chicken broth for a slightly different taste.
- Ensure the garlic is stirred frequently while browning to prevent it from burning and turning bitter.
- Serve with pasta, steamed vegetables, or crusty bread to soak up the delicious sauce.
- To lighten the dish, use half-and-half instead of heavy cream and reduce the butter by half.
