Ingredients

Chicken

  • 4 boneless, skinless chicken breasts (about 1 pound total)
  • Cooking spray
  • Salt and freshly ground pepper, to taste
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon sweet paprika
  • 1/2 cup grated Parmesan cheese

Sauce

  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 10 cloves garlic
  • 1/2 cup low sodium chicken broth (or white wine)
  • 1 cup heavy cream
  • Fresh chopped parsley, for garnish


Instructions

  1. Prepare the chicken: Pound the chicken breasts to an even thickness of 1 inch. Generously spray each chicken breast with cooking spray and set aside.
  2. Season the chicken: In a mixing bowl, combine Parmesan cheese, salt, pepper, Italian seasoning, basil, parsley, and sweet paprika. Rub this seasoning mixture all over the chicken breasts evenly.
  3. Sear the chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 minutes on one side. Flip and cook for an additional 5 minutes, or until the chicken is golden brown and cooked through. Remove chicken from the pan and keep covered.
  4. Cook the garlic: Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Once melted, add the garlic cloves and cook while stirring often for 3 to 4 minutes, until garlic is lightly browned but not burnt.
  5. Deglaze: Pour in the chicken broth or white wine and cook for 3 minutes, allowing the liquid to reduce and incorporate all the browned bits from the pan.
  6. Make the sauce and finish cooking chicken: Stir in the heavy cream, then add the chicken breasts back to the skillet. Cook together for another 5 minutes, letting the sauce thicken slightly and the chicken finish cooking through.
