Ingredients
Chicken Filling
- 2 cups cooked chicken (shredded)
- 1 cup cream cheese (softened)
- 1 cup cheddar cheese (shredded)
- ½ cup salsa
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon salt
Taquito Assembly
- 12 small flour tortillas
- 2 tablespoons olive oil (or cooking spray)
Instructions
- Prep the air fryer. Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes to ensure it’s hot enough for crisping the taquitos.
- Make chicken mixture. In a large bowl, combine 2 cups shredded cooked chicken, 1 cup softened cream cheese, 1 cup shredded cheddar cheese, and ½ cup salsa until thoroughly mixed.
- Season the chicken mixture. Add 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon garlic powder, and ½ teaspoon salt to the chicken mixture. Stir well to evenly season the filling.
- Warm tortillas. Slightly warm the 12 small flour tortillas so they become soft and pliable, which will make rolling them easier without cracking.
- Fill taquitos. Spoon about 2 to 3 tablespoons of the chicken mixture along one edge of each tortilla. Roll each tortilla tightly around the filling and place seam side down to secure them.
- Air fry taquitos. Lightly brush or spray the taquitos with 2 tablespoons olive oil or cooking spray to help them crisp up. Place them in the air fryer basket in a single layer without overcrowding. Air fry for 10 to 12 minutes, flipping halfway through, until they are golden brown and crispy.
- Cool and serve. Allow the taquitos to cool for a few minutes after cooking, then serve warm as a tasty appetizer or snack.
Notes
- For extra crispiness, you can spray the taquitos with a bit more cooking spray halfway through cooking.
- Feel free to substitute corn tortillas for a gluten-free option.
- Leftover taquitos can be refrigerated and reheated in the air fryer for best texture.
- You can add diced jalapeños or hot sauce in the filling for a spicier version.
