Ingredients

Chicken Filling

  • 2 cups cooked chicken (shredded)
  • 1 cup cream cheese (softened)
  • 1 cup cheddar cheese (shredded)
  • ½ cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt

Taquito Assembly

  • 12 small flour tortillas
  • 2 tablespoons olive oil (or cooking spray)


Instructions

  1. Prep the air fryer. Preheat your air fryer to 400°F (200°C) for 3 to 5 minutes to ensure it’s hot enough for crisping the taquitos.
  2. Make chicken mixture. In a large bowl, combine 2 cups shredded cooked chicken, 1 cup softened cream cheese, 1 cup shredded cheddar cheese, and ½ cup salsa until thoroughly mixed.
  3. Season the chicken mixture. Add 1 teaspoon chili powder, 1 teaspoon cumin, ½ teaspoon garlic powder, and ½ teaspoon salt to the chicken mixture. Stir well to evenly season the filling.
  4. Warm tortillas. Slightly warm the 12 small flour tortillas so they become soft and pliable, which will make rolling them easier without cracking.
  5. Fill taquitos. Spoon about 2 to 3 tablespoons of the chicken mixture along one edge of each tortilla. Roll each tortilla tightly around the filling and place seam side down to secure them.
  6. Air fry taquitos. Lightly brush or spray the taquitos with 2 tablespoons olive oil or cooking spray to help them crisp up. Place them in the air fryer basket in a single layer without overcrowding. Air fry for 10 to 12 minutes, flipping halfway through, until they are golden brown and crispy.
  7. Cool and serve. Allow the taquitos to cool for a few minutes after cooking, then serve warm as a tasty appetizer or snack.
