Ingredients
Vegetables
- 2 cups (140 g) shredded green cabbage (or one 16-oz coleslaw mix)
- 2 cups (140 g) shredded purple cabbage
- 1 cup (100 g) shredded carrots
- 1/4 cup (4 g) minced cilantro (optional)
Dressing
- 1/2 cup (125 ml) sour cream
- 1 and 1/2 tbsp (20 ml) lime juice (or vinegar)
- 1 and 1/2 tsp yellow mustard
- Salt and pepper to taste
Instructions
- Make the dressing. In a small bowl, thoroughly mix the sour cream, yellow mustard, lime juice, salt, and pepper until smooth. Taste the dressing and adjust the seasonings to your preference.
- Prepare the coleslaw. In a large bowl, combine the shredded green cabbage, purple cabbage, carrots, and minced cilantro if using. Pour the dressing over the vegetables and toss everything together until evenly coated. Serve immediately and enjoy this fresh, creamy coleslaw.
Notes
- Use freshly shredded cabbage for the best texture and flavor; alternatively, you can use pre-packaged coleslaw mix.
- The cilantro is optional but adds a nice fresh flavor; feel free to omit if not preferred.
