Instructions
- Prepare the Aromatics: Heat the olive oil in a large stock pot or Dutch oven over medium-high heat. Once hot, add the finely chopped onion and red bell pepper. Cook them, stirring occasionally, until they become soft and translucent, about 8 minutes. Then stir in minced garlic, grated fresh ginger, curry powder, ground turmeric, and cayenne pepper. - Sauté Vegetables and Simmer: Add the diced potatoes and corn kernels to the pot, stirring to combine. Cook for an additional 5 minutes, stirring occasionally, to lightly sauté the vegetables.
