Ingredients
Dry Ingredients
- 1 cup whole (raw) almonds
- 3 tablespoons semi-sweet chocolate chips
- 3 to 4 tablespoons wheat germ (or ground flax meal)
Wet Ingredients
- 1 cup pitted dates
- ¼ teaspoon vanilla extract
- ¼ cup almond butter
- 1 to 3 tablespoons water
Instructions
- Make the Energy Ball Mixture: In a food processor, grind the whole almonds and semi-sweet chocolate chips until they form a coarse breadcrumb-like texture. This helps create the base texture for the energy balls.
- Add Remaining Ingredients: Add the pitted dates, vanilla extract, and almond butter to the food processor. Blend until the mixture is well combined. Gradually add water one tablespoon at a time to achieve a dough consistency that holds its shape when pressed into a ball.
- Roll into Balls: Scoop out a generous tablespoon of the mixture and roll it between your palms to form a smooth ball. Repeat until you have 14-16 energy balls.
- Coat with Wheat Germ: Place the wheat germ on a plate and gently roll each ball in it to evenly coat the surface. This adds texture and nutrition.
- Make Energy Bars (Optional): Line a 9×5-inch loaf pan with plastic wrap and spray with nonstick cooking spray. Transfer the energy-ball mixture into the pan and evenly spread and flatten it using wet hands or the back of a spoon to prevent sticking.
- Chill and Cut Bars: Fold the excess plastic wrap over the mixture and refrigerate for 30 minutes. Once chilled, lift the mixture out using the plastic wrap, place on a cutting board, and slice into 12-14 bars. Optionally, coat the bars with wheat germ for extra texture.
