- 1 15-ounce can chickpeas (rinsed and drained)
- ½ red onion (thinly sliced)
- ⅔ cup crumbled feta
Chimichurri Dressing
- ⅓ cup olive oil
- 2 cloves garlic (minced)
- ½ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes (optional)
- ¼ teaspoon black pepper
- Juice from 1 lemon
Instructions
- Whisk: In a small bowl, whisk together the olive oil, minced garlic, salt, dried oregano, red pepper flakes (if using), black pepper, and fresh lemon juice until the chimichurri dressing is well combined and emulsified.
- Combine: In a large mixing bowl, add the cooked and diced steak, finely chopped fresh parsley and cilantro, sliced mini seedless cucumbers, halved cherry tomatoes, rinsed and drained chickpeas, and thinly sliced red onion. Gently mix to combine all salad ingredients evenly.
- Toss: Pour the prepared chimichurri dressing over the salad mixture and toss thoroughly to ensure every ingredient is coated with the flavorful dressing.
- Serve: Gently stir in the crumbled feta cheese, then taste the salad and adjust seasoning if needed. Serve immediately to enjoy the fresh flavors or allow the salad to sit for 10–15 minutes so the flavors can meld together beautifully.
