Description

Sandwich Ingredients

  • 6 (4-inch) French steak rolls or white sub rolls
  • Unsalted butter, softened
  • Garlic powder, to taste
  • 1 batch chicken cutlets (prepared according to recipe)
  • 6 slices mozzarella cheese (or enough to cover chicken cutlets)
  • Rao’s marinara sauce, as needed
  • Freshly grated Parmesan cheese (optional)
  • Basil pesto (optional)


Instructions

  1. Prepare Chicken: Cook the chicken cutlets following the referenced recipe until they are golden and cooked through.
  2. Broil Buns: Adjust the oven rack 8 inches below the broiler and preheat the broiler on high. Slice the rolls in half and place the cut sides up on a foil-lined baking sheet. Spread softened butter on the inside of each roll and lightly sprinkle with garlic powder. Broil for about 45 seconds to 1 minute until golden and crisp, then remove and let cool slightly. Remove the top buns from the baking sheet and set aside.
  3. Toast Bread: Spread a generous layer of marinara sauce on the bottom halves of the buns. Cut chicken cutlets lengthwise if necessary to fit the buns, then place them on top of the sauce.
  4. Add Cheese: Place slices of mozzarella on top of each chicken cutlet. Sprinkle freshly grated Parmesan cheese over the mozzarella if desired.
  5. Broil Again: Return the open-faced sandwiches (bottom halves only) to the broiler and broil until the cheese is melted and bubbling, about 2 minutes. Watch closely to avoid burning. When removed from the oven, add a little more marinara sauce on top of the melted cheese.
  6. Finish and Serve: Spread basil pesto on the top halves of the buns if using. Close the sandwiches gently and serve immediately while warm.
