Ingredients

Chicken

  • 1 pound boneless skinless chicken thighs (3-4 thighs)
  • 4 teaspoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried dill (optional)
  • 1 large lemon (cut into wedges)

Salad

  • 1 large English cucumber (quartered lengthwise and thinly sliced)
  • 2 cups cherry tomatoes (halved, mixed colors)
  • 3 tablespoons finely chopped parsley
  • 1 batch Greek salad dressing (prepared separately)

Bowl Components

  • 1 batch tzatziki (prepared separately)
  • 3 ounces feta cheese, crumbled

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) and line a large sheet pan with foil for easy cleanup.
  2. Prepare Chicken: Pat the chicken thighs dry with paper towels; no need to trim excess fat as it will render during cooking.
  3. Season Chicken: In a small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, garlic powder, onion powder, paprika, oregano, basil, and optional dill. Rub or brush this mixture evenly on both sides of the chicken thighs.
  4. Bake Chicken: Arrange the chicken thighs flat on the prepared sheet pan with space between each piece. Bake in the center of the preheated oven for 15 minutes.
  5. Broil Chicken: Adjust the oven rack about 8 inches from the heat source and switch the oven to broil. Broil the chicken for an additional 7–10 minutes, until nicely browned, lightly charred, and reaching an internal temperature of 165°F. Watch carefully to avoid burning.

  7. Prepare Couscous, Tzatziki, and Dressing: Prepare couscous, tzatziki, and Greek salad dressing according to their respective recipes or package instructions.
  8. Make Salad: In a bowl, combine the sliced cucumber, halved cherry tomatoes, and chopped parsley. Drizzle with Greek salad dressing to taste, toss well, and adjust seasoning as needed.
  9. Assemble Bowls: Divide the cooked couscous, sliced chicken, and salad among four bowls.
