Description

Chicken Afritada is a classic Filipino stew that features tender chicken thighs simmered in a savory tomato-based sauce with potatoes, bell peppers, and peas. This hearty and flavorful dish is infused with aromatics like garlic, onion, soy sauce, and bay leaves, making it a comforting and satisfying meal perfect for any day of the week.

Ingredients

Meat and Protein

  • 1 lb chicken thighs

Vegetables

  • 2 cut potatoes
  • 1-2 red bell peppers
  • 1/4 cup peas
  • Olives (for garnish/photos)
  • 1 onion, minced
  • 1.5 tablespoons minced garlic

Condiments and Sauces

  • 2 tablespoons tamari or low sodium soy sauce
  • 3 tablespoons tomato paste
  • 2 teaspoons fish sauce (optional)

Spices and Seasonings

  • 1/2 teaspoon pepper
  • 2 bay leaves
  • Salt to taste

Oils and Liquids

  • 2 tablespoons canola oil
  • 1 cup water

Instructions

  1. Prepare and Brown the Chicken: Heat a Dutch oven or a deep pan over medium heat and add canola oil. Sauté the minced garlic until fragrant, then add the chicken thighs. Brown the chicken pieces on all sides, then season with tamari (or low sodium soy sauce), black pepper, and add the minced onion. Cook until the onion softens.
  2. Add Tomato Paste and Liquid Ingredients: Stir in the tomato paste and cook for about 2 minutes to deepen the flavor. Gradually add 1 cup of water and mix well. Add the fish sauce and bay leaves for added seasoning, ensuring the sauce is well combined.
  3. Simmer with Potatoes and Half of the Bell Peppers: Add half of the sliced red bell peppers and the cut potatoes to the pot. Cover and let the stew cook on low heat for approximately 25 minutes until the chicken is tender and the potatoes are cooked through.
  4. Finish Cooking with Remaining Bell Peppers and Peas: Add the remaining bell peppers and peas to the pot. Simmer uncovered for an additional 5 minutes to allow the flavors to meld and the vegetables to soften without losing their texture. Taste and adjust salt as needed before serving.

Notes

  • Fish sauce is optional but adds an authentic umami flavor; adjust quantity to taste.
  • Use bone-in chicken thighs for more flavor and juiciness, but boneless can also be used for convenience.
  • Adjust the heat level by using spicier peppers if desired.
  • Serve with steamed white rice for a traditional Filipino meal experience.
  • Canola oil is used for its neutral flavor and high smoke point, but you can substitute with vegetable or sunflower oil.
