Description

These Chewy Funfetti Blondies are a delightful twist on classic blondies, bursting with colorful rainbow sprinkles and a rich, buttery flavor. With a chewy texture and just the right amount of sweetness, they make a perfect treat for parties or everyday indulgence. Ready in just 45 minutes, these blondies are an easy-to-make crowd-pleaser that kids and adults will love.

Ingredients

Wet Ingredients

  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 Tablespoon vanilla extract

Dry Ingredients

  • 1/4 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt

Add-ins

  • 1/4 cup rainbow sprinkles

Instructions

  1. Preheat and Prep: Preheat the oven to 350°F (175°C). Line an 8 x 8-inch baking pan with parchment paper, ensuring the paper extends over the sides for easy removal later. Set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth and combined. Add the whole egg, egg yolk, and vanilla extract, then mix well until you have a uniform batter.
  3. Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking powder, and salt to evenly distribute the leavening and seasoning.
  4. Mix Wet and Dry: Gradually add the dry ingredients into the wet ingredients bowl. Gently fold them together using a spatula until just combined, taking care to avoid overmixing to keep the blondies tender.
  5. Add Sprinkles: Fold in the rainbow sprinkles evenly throughout the batter, reserving a few to sprinkle on top if desired.
  6. Pour and Bake: Pour the batter into the prepared pan and spread it into an even layer. Bake in the preheated oven for about 30 minutes, or until the edges are golden brown and set, and the blondies have puffed up slightly. The center may still look slightly undercooked; it will firm up as it cools.
  7. Cool and Serve: Allow the blondies to cool fully in the pan on a wire rack. Once cool, lift them out by the parchment paper and cut into 9 large squares or 16 smaller pieces. Enjoy!

Notes

  • Do not overmix the batter to maintain chewy, tender blondies.
  • You can use a different size pan, but adjust baking time accordingly.
  • For extra fun, sprinkle some sprinkles on top of the batter before baking.
  • Store blondies in an airtight container at room temperature for up to 4 days.
  • Blondies may look slightly underbaked in the center immediately after baking but will set as they cool.
