Ingredients
Apples and Spice
- 2 large apples (Honeycrisp or Fuji)
- ½ teaspoon cinnamon
Cheesecake Filling Mixture
- ½ cup full-fat cream cheese, softened to room temperature
- 1 tablespoon sour cream or Greek yogurt
- 2 tablespoons organic cane sugar
- 1 egg, room temperature
- ½ teaspoon vanilla extract
Graham Cracker Crisp Topping
- ¼ cup graham cracker crumbs
- 2 tablespoons rolled oats
- 1 tablespoon organic cane sugar
- 2 tablespoons melted butter
For Serving (Optional)
- Melted chocolate
- Warm caramel or salted caramel sauce
- Whipped cream
Instructions
- Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the apples.
- Prep Apples: Slice each apple in half lengthwise, then carefully scoop out the core, seeds, and some flesh to create hollowed-out bowls using a melon baller or small spoon. Arrange the apple halves cut-side up in a baking dish and sprinkle the cinnamon evenly over the exposed apple surfaces.
- Make Cheesecake Filling: In a bowl, use a stand mixer or hand mixer to beat the softened cream cheese, sour cream or Greek yogurt, and cane sugar on medium-high speed until the mixture is smooth and creamy. Scrape down the sides as needed. Next, add the egg and vanilla extract, mixing on low speed until fully incorporated and smooth.
- Fill Apples: Spoon the cheesecake filling evenly into each prepared apple half, making sure to leave some space at the top for the topping.
- Prepare Topping: In a small bowl, combine graham cracker crumbs, rolled oats, cane sugar, and melted butter. Stir until the ingredients are well mixed and crumbly.
- Add Topping: Sprinkle the graham cracker and oat topping generously over the cheesecake filling in each apple half.
- Bake Apples: Place the baking dish in the preheated oven and bake for about 35 minutes, or until the cheesecake filling is set and the apples are tender to the touch. Remove from the oven and allow to cool slightly before serving.
- Serve: Enjoy these stuffed baked apples warm, at room temperature, or chilled from the fridge. Optionally, drizzle with melted chocolate, warm caramel or salted caramel sauce, or top with a dollop of whipped cream to enhance the flavor and presentation.
Notes
- Choose firm, sweet apples like Honeycrisp or Fuji to maintain structure during baking.
- Soften cream cheese thoroughly for a smoother cheesecake filling.
- Using a melon baller helps create uniform cavities in the apples for filling.
- Adjust baking time slightly depending on apple size to avoid overcooking.
- Serve with toppings of your choice for added flavor and presentation.
