Description

These luscious Cheesecake Bars with Chocolate Ganache combine a buttery Biscoff cookie crust with a creamy cheesecake filling and a rich, glossy chocolate ganache topping. Perfect for dessert lovers, these bars offer a delightful balance of textures and flavors, ideal for sharing at gatherings or enjoying as an indulgent treat.

Ingredients

Crust

  • 1 1/2 cups crushed Biscoff cookies (about 27 cookies)
  • 3 tablespoon packed dark brown sugar
  • 6 tablespoon unsalted butter (melted)

Filling

  • 24 ounces cream cheese (softened)
  • 1 cup sugar
  • 2 tablespoon flour
  • 3 eggs
  • 1 cup sour cream
  • 1 tablespoon vanilla bean paste

Chocolate Ganache

  • 1 cup heavy whipping cream
  • 4 tablespoon butter
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup confectioners sugar

Instructions

  1. Prepare the crust: In a mixing bowl, combine crushed Biscoff cookies and dark brown sugar. Pour the melted butter over the mixture and stir until fully combined. Press this crumb mixture evenly into the bottom of a 9×13-inch baking pan to form the crust.
  2. Preheat and prepare filling: Preheat your oven to 325 °F (163 °C). In a large bowl, cream together the softened cream cheese, sugar, and flour until the mixture is light and fluffy. This ensures a smooth and airy cheesecake texture.
  3. Add eggs and flavorings: Add the eggs one at a time, mixing well after each addition to incorporate air and prevent curdling. Then fold in the sour cream and vanilla bean paste until just combined to enhance richness and aroma.
  4. Bake the cheesecake: Pour the prepared filling over the crust in the baking pan. Bake for 45 minutes until set but still slightly jiggly in the center. Remove from oven and let the cheesecake cool completely to room temperature.
  5. Make the chocolate ganache: While the cheesecake cools, heat the heavy cream and butter in a small saucepan just until boiling. Remove from heat and immediately pour the hot cream mixture over the semi-sweet chocolate in a heat-safe bowl. Stir gently until the chocolate is melted and the ganache is smooth.
  6. Add sweetness and blend: Add the confectioners sugar to the ganache and whisk thoroughly until fully combined and silky smooth, ensuring a glossy finish for the topping.
  7. Top and chill: Pour the cooled ganache evenly over the cooled cheesecake surface. Place the entire pan in the refrigerator and chill overnight to allow the ganache to set firmly.
  8. Serve: Remove the cheesecake bars from the fridge and allow them to come to room temperature before cutting. Slice into bars and serve to enjoy the perfect combination of creamy cheesecake and rich chocolate ganache.

Notes

  • For best results, soften cream cheese to room temperature before mixing to avoid lumps.
  • Use good quality semi-sweet chocolate for a richer ganache flavor.
  • Make sure to press the crust firmly to prevent it from crumbling when cutting.
  • Chilling overnight is crucial for the ganache to set properly and for clean cuts.
  • You can substitute Biscoff cookies with graham crackers or digestive biscuits if unavailable.
