Ingredients
Filling
- 1 pound ground beef
- 2 Tablespoons ketchup
- 1 Tablespoon mustard
- 1 teaspoon dried minced onion
- 1 Tablespoon pickle relish (dill or sweet)
- Seasoned salt, to taste
- 1 cup shredded cheddar cheese
Egg Rolls
- 12 egg roll wrappers
- Olive oil, for brushing
- Water, for sealing wrappers
Dipping Sauce
- ½ cup mayonnaise
- 2 Tablespoons ketchup
- 2 Tablespoons pickle relish (dill or sweet)
Instructions
- Cook the Beef Filling: In a large skillet over medium heat, brown the ground beef until no longer pink. Drain off any excess grease. Stir in 2 tablespoons of ketchup, 1 tablespoon of mustard, dried minced onion, pickle relish, and seasoned salt. Cook for an additional 1 to 2 minutes until all ingredients are well combined and heated through. Remove the skillet from heat and mix in the shredded cheddar cheese. Set aside and allow the mixture to cool slightly.
- Assemble the Egg Rolls: Place about ¼ cup of the cooled meat mixture in the center of each egg roll wrapper. Fold the side corners inward, then brush water along the edges of the wrapper and roll it up tightly to form a sealed egg roll. Place the sealed egg rolls seam-side down on a plate or baking sheet. Brush the outside of each egg roll with olive oil to promote crispiness during cooking, then set aside until ready to cook.
- Air Fry the Egg Rolls: Preheat your air fryer to 360°F (182°C). Arrange the egg rolls in the air fryer basket in a single layer, making sure they are not touching. Cook for 7 minutes. Carefully flip each egg roll over, then continue cooking for an additional 2 minutes or until they are golden brown and crispy.
- Prepare the Dipping Sauce: While the egg rolls are cooking, combine mayonnaise, ketchup, and pickle relish in a bowl. Stir until smooth and well combined to create a tangy and creamy sauce that complements the egg rolls perfectly.
- Serve: Remove the egg rolls from the air fryer and let them cool slightly. Serve them warm alongside the prepared dipping sauce for a tasty appetizer or snack.
Notes
- You can substitute shredded mozzarella or Monterey Jack cheese for a different flavor profile.
- If you don’t have an air fryer, bake the egg rolls in a preheated oven at 400°F (204°C) for about 15-18 minutes, turning halfway through.
- Ensure the filling is cooled before wrapping to prevent the wrappers from becoming soggy.
- For extra crispiness, lightly spray the egg rolls with cooking spray before air frying.
- Leftover egg rolls can be stored in the refrigerator for up to 3 days and reheated in the air fryer.
