Description

A quick and delicious Caprese Chicken Gnocchi Skillet featuring golden crispy gnocchi, tender chicken, juicy cherry tomatoes, fresh basil, and melted mozzarella, all cooked together in one skillet for an easy, flavorful weeknight meal.


Ingredients

Gnocchi

  • 500 gram gnocchi (shelf stable; see note 1)

Protein & Vegetables

  • 2 chicken breasts (chopped into bite-sized pieces)
  • 3 cups cherry tomatoes (halved)
  • 1 cup fresh basil (chopped)

Dairy

  • 1 cup mozzarella (shredded)

Oils & Seasonings

  • 3 tablespoons olive oil
  • Salt & pepper (generous amounts, to taste)


Instructions

  1. Heat oil and cook gnocchi: Heat olive oil in a large non-stick skillet over medium heat. Add the gnocchi and season generously with salt and pepper.
  2. Brown gnocchi: Cook, stirring occasionally for 15-20 minutes, until gnocchi is golden brown and slightly crispy. Add additional olive oil if the pan becomes dry to help achieve crispiness.
  3. Set gnocchi aside: Remove the gnocchi from the pan and set aside on a plate.
  4. Cook chicken: If needed, add another tablespoon of olive oil to the pan. Add the chopped chicken breasts, season with salt and pepper, and cook for 5-7 minutes until fully cooked and no longer pink inside.
  5. Combine ingredients: Return the crispy gnocchi to the pan along with the halved cherry tomatoes, chopped basil, and shredded mozzarella.
  6. Melt cheese and serve: Stir everything together for 1-2 minutes until the cheese has melted and the tomatoes have softened slightly. Serve immediately while hot and cheesy.

Notes

  • Gnocchi can be shelf-stable or fresh, but shelf-stable gnocchi works best for achieving a crispy texture.
  • You can customize the recipe by adding balsamic glaze or extra herbs for more flavor.
  • Ensure chicken is fully cooked to a safe internal temperature of 165°F (75°C) before serving.
