Instructions

  1. Vegetables: Heat the olive oil in a large pan over medium heat. Add the chopped onion, celery, jalapeno pepper (if using), and green pepper. Cook for 5 minutes, stirring occasionally, until the vegetables soften.
  2. Andouille and Garlic: Add minced garlic and sliced andouille sausage to the pan. Cook for another minute, stirring, until the garlic is fragrant.
  3. Tomato Sauce and Seasoning: Pour in the crushed tomatoes and sprinkle the Cajun seasoning over the mixture. Stir well to combine. Bring the sauce to a boil, then reduce the heat to low and let it simmer for 20 minutes or longer to develop deep flavors. While the sauce simmers, prepare the pasta according to package instructions.
