  • 2 lb ribeye steak

Seasonings

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tbsp rosemary (freshly chopped)
  • 1/2 tbsp thyme (freshly chopped)
  • 4 garlic cloves (pressed or crushed)

Cooking Fats

  • 3 tbsp avocado oil
  • 3 tbsp unsalted butter


Instructions

  1. Prepare the steak: Cut the ribeye steak into 1-inch chunks to ensure even cooking and bite-sized pieces for serving.
  2. Season the steak: Generously season the steak chunks with 1 teaspoon of salt and 1/2 teaspoon of black pepper, coating all sides evenly for balanced flavor.
  3. Heat the skillet and sear: Heat a cast-iron skillet over high heat until smoking hot. Add 3 tablespoons of avocado oil, then carefully add the steak bites. Stir and sear them for 2 to 3 minutes, or until a flavorful crust forms. If your skillet is crowded, cook in batches to avoid steaming.
  4. Add butter and herbs: Reduce heat slightly and add 3 tablespoons of unsalted butter, along with freshly chopped rosemary, thyme, and crushed garlic cloves to the skillet.
