Ingredients
Broccoli
- 32 oz broccoli florets, chopped small
- 2 teaspoons kosher salt, divided
- 2 teaspoons garlic powder, divided
- Nonstick cooking spray (such as Chosen Foods avocado oil spray)
Ground Chicken
- 1 lb ground chicken
- 1 teaspoon dried dill
- 3 teaspoons dried chives
- Remaining 1 teaspoon kosher salt
- Remaining 1 teaspoon garlic powder
- Additional nonstick cooking spray for skillet
Toppings
- 1 cup full fat plain Greek yogurt
- 1/2 cup buffalo sauce (such as Primal Kitchen)
- 4 oz crumbled blue cheese
- Fresh dill and chives for serving (optional)
Instructions
- Preheat oven: Preheat your oven to 425°F and spray a large sheet pan with nonstick cooking spray to prepare for roasting the broccoli.
- Roast the broccoli: Cut broccoli florets into smaller pieces for even and faster cooking. Spread them on the prepared baking sheet, spray with more cooking oil, then sprinkle with 1 teaspoon kosher salt and 1 teaspoon garlic powder. Toss the broccoli to coat evenly, spread in a single layer, and roast in the oven for 20-25 minutes until they turn deeply golden brown and tender.
- Cook the chicken: While the broccoli roasts, heat a medium skillet over medium-high heat and spray it with cooking oil. Add the ground chicken, breaking it up with a spoon, and cook until no pink remains and the meat starts to brown. Season with the remaining 1 teaspoon kosher salt, 1 teaspoon garlic powder, dried dill, and dried chives. Stir to combine well, taste, and adjust seasoning if necessary.
- Assemble the bowls and serve: Divide the roasted broccoli evenly among four bowls. Top each with the cooked ground chicken. Add a heaping 1/4 cup of Greek yogurt and drizzle buffalo sauce over the top to taste. Sprinkle crumbled blue cheese and garnish with fresh dill and chives if desired. Serve immediately for the best flavor and texture.
Notes
- For extra spice, add more buffalo sauce or a dash of cayenne pepper to the chicken while cooking.
- Use full-fat Greek yogurt for creaminess and richness, but low-fat can be substituted.
- Broccoli can be prepped ahead of time to save time on busy days.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- Make sure to break the ground chicken into small pieces during cooking for even texture throughout the bowl.
