Description

This Brazilian Collard Greens recipe offers a simple and flavorful way to prepare fresh collard greens sautéed with garlic and olive oil. Perfect as a healthy side dish, it delivers tender, crisp-tender greens infused with aromatic garlic flavor in just minutes.

Ingredients

Ingredients

  • 1 large bunch fresh collard greens
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • Salt, to taste

Instructions

  1. Prepare the Collard Greens: Rinse the collard greens thoroughly under cold water to remove any dirt. Pat them dry with paper towels. Remove the thick center stem from each leaf, then stack the leaves on top of each other.
  2. Slice Into Ribbons: Fold the stacked leaves in half lengthwise, then roll tightly into a cigar-shaped cylinder. Using a sharp chef’s knife, cut the roll into very thin ribbons. Set aside.
  3. Heat the Olive Oil and Garlic: Place a large skillet over medium heat and add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Sauté the Collard Greens: Add the sliced collard greens to the skillet and toss to coat with the garlic oil. Cover the skillet and cook for about 5 minutes, stirring occasionally, until the greens are wilted and tender but still have a slight crispness.
  5. Season and Serve: Season the sautéed collard greens with salt to taste. Serve immediately as a flavorful and nutritious side dish.

Notes

  • For a more intense garlic flavor, you can add an extra clove or two of garlic.
  • Be careful not to overcook the greens; they should be tender but maintain some texture.
  • This dish pairs well with grilled meats or rice-based meals common in Brazilian cuisine.
  • Use fresh, firm collard greens for the best texture and flavor.
