- 2 cups (290 g) fresh blackberries
- 1 tsp (5 ml) vanilla extract

- 2 tbsps (42 g) honey
- ½ tsp (3 g) kosher salt
Pastry and Wash
- 1 sheet (8-9 oz / 225-255 g) frozen puff pastry (thawed overnight in the refrigerator)
- 3 tbsps (43 g) unsalted butter (melted and slightly cooled)
- 1 large egg
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C). Line a medium baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare the blackberry filling: In a medium bowl, gently toss the fresh blackberries with vanilla extract, lemon juice, honey, and kosher salt until the berries are evenly coated. Set the mixture aside to allow the flavors to blend.
- Make the egg wash: Melt the unsalted butter and let it cool for 1 to 2 minutes to prevent cooking the egg. Whisk the melted butter together with one large egg until smooth and well combined.
- Prepare the puff pastry: Unfold the thawed puff pastry sheet onto the prepared baking sheet. Brush the entire surface of the pastry evenly with the butter and egg wash to give it a golden color during baking.
- Assemble the galette: Spoon the blackberry mixture into the center of the puff pastry, leaving a 1½ to 2-inch (4 to 5 cm) border free around the edges. Carefully fold the edges of the pastry over the filling, overlapping and pressing gently to seal and form the rustic shape. Brush the folded edges with the remaining butter egg wash for added color and shine.
- Bake: Place the galette in the preheated oven and bake for 25 to 30 minutes, or until the pastry is deep golden brown and the blackberry filling is bubbling, indicating it is cooked through.
- Cool and serve: Remove the galette from the oven and let it cool for 5 to 10 minutes to allow the filling to thicken slightly. Serve warm, optionally with a scoop of vanilla ice cream for an extra indulgent touch.
