Ingredients
Meat
- 12 ounces breakfast sausage (links, patties, loose meat, etc.)
Dough
- 16.3 ounce can refrigerated biscuits (Pillsbury Grands!)
Egg Mixture
- 10 large eggs
- 1 cup half and half
- 4 ounces shredded cheddar cheese
- 1/4 cup thinly sliced green onion + more for garnish
- 1 teaspoon Kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
Other
- Butter or cooking spray for greasing the pan
Instructions
- Heat Oven + Prep Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish thoroughly with butter or cooking spray to prevent sticking.
- Cook Sausage: In a skillet over medium-high heat, cook the breakfast sausage thoroughly, breaking it apart with a spatula until browned and crumbled. Drain excess fat if necessary. Spread the cooked sausage evenly over the bottom of the prepared baking dish.
- Layer Biscuits: Using clean kitchen scissors, cut each refrigerated biscuit into four pieces. Arrange the biscuit pieces in a single, even layer over the cooked sausage in the baking dish.
- Make Egg Mixture: In a large mixing bowl, whisk together the eggs, half and half, shredded cheddar cheese, sliced green onions, Kosher salt, garlic powder, onion powder, and black pepper until well combined. Pour this egg mixture evenly over the layered biscuits and sausage in the baking dish. If the cheese clumps on top, use a spatula to gently spread it evenly.
- Bake: Place the baking dish uncovered in the preheated oven and bake for approximately 30 minutes, or until the top is golden brown. Then tent the dish loosely with aluminum foil and bake an additional 5 minutes to ensure the eggs are set in the center.
- Garnish + Serve: Remove the casserole from the oven and let it cool for 5 to 10 minutes. Slice into portions and garnish with additional sliced green onions before serving. Enjoy your warm, cheesy breakfast bake!

Notes
- You can swap out the breakfast sausage for turkey sausage or a plant-based alternative for a different protein option.
- Using refrigerated biscuits saves time, but homemade biscuits can add a special touch.
- Feel free to add diced bell peppers or mushrooms to the sausage layer for extra veggies.
- Make-ahead tip: Assemble the casserole the night before, cover, and refrigerate. Bake in the morning, adding extra bake time if needed.
- For a dairy-free option, substitute half and half with unsweetened almond or oat milk and use a dairy-free cheese alternative.
