Description

A delicious mixed berry crisp featuring raspberries, blueberries, strawberries, and blackberries topped with a buttery, sweet crumble. Baked to golden perfection, this dessert is perfect served warm with vanilla ice cream.

Ingredients

Berry Mixture

  • 1 cup Raspberries
  • 1 cup Blueberries
  • 1 cup Strawberries (cut into quarters)
  • 1 cup Blackberries
  • 1/4 cup Sugar
  • 1 1/2 Tablespoons Cornstarch
  • 1 teaspoon Vanilla Extract

Crumble Topping

  • 1/2 cup Brown Sugar
  • 1/2 cup Sugar
  • 1 cup Flour
  • 8 Tablespoons Butter (cut into cubes)
  • 1/4 teaspoon Cinnamon (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the crisp.
  2. Prepare Berry Mixture: In a bowl, combine the raspberries, blueberries, strawberries, blackberries, 1/4 cup sugar, cornstarch, and vanilla extract. Toss gently to coat all the berries evenly; this mixture will thicken as it bakes.
  3. Make Crumble Topping: In a separate small bowl, mix together the flour, brown sugar, sugar, and optional cinnamon. Add the cold butter cubes and use a fork or pastry cutter to cut the butter into the dry ingredients until the mixture is crumbly with some pea-sized chunks of butter remaining. This will create a rich, flaky topping as it bakes.
  4. Assemble and Bake: Transfer the berry mixture into a 9-inch baking dish, spreading it evenly. Sprinkle the crumble topping over the berries to form a nice layer. Bake in the preheated oven for 26-32 minutes or until the topping is light golden and the berry juices are bubbling around the edges.
  5. Cool and Serve: Allow the crisp to cool for 10-15 minutes after baking to help it set. Serve warm, ideally with a scoop of vanilla bean ice cream for a classic pairing.

Notes

  • You can use frozen berries if fresh are not available—just thaw and drain excess liquid before mixing.
  • Cinnamon is optional, but adds a warm spice note to the crumble topping.
  • Butter should be cold to achieve a crumbly texture in the topping.
  • Letting the crisp cool slightly ensures easier serving and better texture.
  • Adding vanilla ice cream enhances the dessert but it can be enjoyed on its own or with whipped cream.
