Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (177°C). Generously spray a 12-count muffin pan with nonstick spray. If using muffin liners, spray them as well. Note that the oatmeal cups may stick slightly to liners, so skipping liners can be helpful.
  2. Mix ingredients: In a large bowl, whisk together the milk, eggs, maple syrup, applesauce, oats, baking powder, cinnamon, nutmeg, vanilla extract, and salt until evenly combined. The mixture will be slightly liquidy.
  3. Add apples and nuts: Fold in the peeled chopped apple and optional nuts gently using a spoon or silicone spatula to evenly distribute them throughout the batter.
  4. Fill muffin cups: Spoon the batter evenly into each muffin cup, making sure each has a good mixture of oats, apples, and liquid. Fill the cups all the way to the top. If desired, sprinkle coarse sugar on top for a crunchier texture.
