Description

This vibrant Avocado Salad combines creamy, ripe avocados with crisp cucumbers, juicy cherry tomatoes, and a zingy lime dressing infused with garlic and fresh herbs. Perfect as a light lunch or a refreshing side dish, this salad is quick to prepare and packs a nutritious punch with wholesome ingredients.

Ingredients

Salad Ingredients

  • 2 large avocados, firm but ripe, cut into ½ inch pieces
  • ¼ red onion, very thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, thinly sliced

Dressing Ingredients

  • ⅓ cup olive oil
  • Juice of 1 lime or ½ lemon (about 2-3 tbsp)
  • Large handful fresh cilantro, or 1-2 tbsp fresh dill
  • 1 tsp minced garlic or ½ tsp garlic powder
  • 1 tsp Italian seasoning or Herbs de Provence
  • ¼ tsp crushed red pepper flakes
  • Salt and pepper, to taste

Instructions

  1. Combine salad ingredients: In a medium or large bowl, gently combine the cut avocados, thinly sliced red onion, halved cherry tomatoes, and thinly sliced English cucumber to form the base of the salad.
  2. Prepare the dressing: In a blender or food processor, add the olive oil, lime juice, fresh cilantro (or dill), minced garlic (or garlic powder), Italian seasoning (or Herbs de Provence), crushed red pepper flakes, salt, and pepper. Pulse until the dressing is smooth. Add a little water if the consistency is too thick.
  3. Toss salad with dressing: Pour the prepared dressing over the avocado salad and gently toss everything together to ensure the salad is evenly coated with the flavorful dressing. Serve immediately for best freshness.

Notes

  • Use firm yet ripe avocados to ensure the pieces hold their shape in the salad.
  • Thinly slice the English cucumber to add a refreshing crunch without overpowering the salad.
  • Adjust the amount of crushed red pepper flakes to control the level of spice in the dressing.
  • If you prefer a milder garlic flavor, substitute minced garlic with garlic powder.
  • This salad is best served fresh but can be refrigerated for up to 4 hours, though avocado may darken slightly.
