Ingredients

For the Beef Arayes

  • 3 pitas (5-6 inches in diameter), halved
  • 1 lb lean ground beef
  • 1 small-medium yellow onion, grated
  • 2 garlic cloves, grated or pressed
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp salt
  • ½ tsp pepper
  • 6 tbsp fresh minced mint
  • ¼ tsp chili flakes
  • Olive oil (for cooking, about 2-3 tbsp)

For Serving (Both Versions)

  • Lemon wedges
  • 1-2 tbsp fresh minced parsley
  • ½ – 1 cup tzatziki sauce

For the Chicken Arayes Variation

  • 3 pitas (5-6 inches in diameter), halved
  • 1 lb ground chicken
  • ½ cup crumbled feta cheese
  • 1 small-medium red onion, grated
  • 4 garlic cloves, pressed
  • 1 ½ tsp salt
  • ½ tsp ground pepper
  • 1 tbsp olive oil (plus extra for cooking)
  • Zest from one lemon
  • 4 tbsp minced fresh mint
  • 2 tbsp minced fresh basil
  • 1 jalapeno (seeds removed), minced


Instructions

  1. Make the meat filling: In a large bowl, combine ground beef, grated yellow onion, grated garlic cloves, garlic powder, onion powder, salt, pepper, fresh minced mint, chili flakes, and mix thoroughly with your hands or a spatula until evenly combined. For the chicken variant, combine ground chicken, crumbled feta, grated red onion, pressed garlic, salt, pepper, olive oil, lemon zest, fresh mint, fresh basil, and minced jalapeno, mixing well.
  2. Portion the filling: Divide the prepared meat mixture into 6 equal portions. Shape each into a semi-circle slightly smaller than half the pita size to ensure it fits well inside.
  3. Stuff the pita: Carefully open each pita half and place a flattened portion of the meat filling inside. Close the pita gently and press down to flatten the sandwich so the filling is about half an inch thick, taking care not to tear the bread. Adjust portion number based on pita size if needed.
  4. Cook the Arayes: Heat a drizzle of olive oil in a pan over medium heat. Add two stuffed pita halves to the pan.
