Description
A quick and creamy tomato coconut pasta sauce that comes together in just 5 minutes. This vibrant sauce blends tangy tomatoes with rich coconut milk and aromatic spices, making a flavorful dairy-free alternative perfect for a speedy weeknight dinner.
Ingredients
Primary Ingredients
- 2 cups (480 ml) canned crushed tomatoes
- 1 cup (240 ml) coconut milk, full fat
- ¾ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika or regular paprika
- ½ teaspoon onion powder, or to taste
- ½ teaspoon dried oregano
- ½ teaspoon dried basil and/or fresh chopped basil leaves
- 1 teaspoon sugar
- 1 teaspoon tapioca flour (optional, for thickening)
- 2 teaspoons nutritional yeast (optional)
- 2 tablespoons lemon juice
Instructions
- Add Ingredients: Add all the ingredients into a nonstick saucepan. This includes the canned crushed tomatoes, full fat coconut milk, seasonings, spices, tapioca flour if using, nutritional yeast if desired, and lemon juice.
- Heat and Whisk: Place the saucepan over high heat. Use a silicone whisk to continuously whisk the sauce to incorporate all ingredients fully, preventing lumps and ensuring an even mixture.
- Simmer and Thicken: Allow the sauce to cook for about 4 minutes, stirring occasionally with the silicone whisk until it thickens slightly and the flavors meld.
- Final Whisk and Serve: Give the sauce a final whisk to ensure smoothness. Serve immediately over your favorite cooked pasta such as gnocchi, which cooks quickly and pairs well with this sauce. Enjoy!
Notes
- Using a silicone whisk helps prevent scratching the nonstick saucepan surface.
- Adjust salt and pepper to your taste preference.
- Tapioca flour is optional but helps to thicken the sauce to a creamier consistency.
- Substitute fresh herbs for dried if available to enhance freshness.
- Gnocchi is suggested as a pasta option that cooks quickly to keep the entire meal ready within 5 minutes.
- This sauce is dairy-free and can be vegan if nutritional yeast is used instead of cheese.
