Ingredients

Fritters

  • 850 grams butternut squash, grated
  • 2 tablespoons sage, finely chopped plus extra for serving
  • 2 large eggs
  • ½ cup rice flour
  • ½ teaspoon sea salt
  • Extra virgin olive oil, for frying (about 3 tablespoons or more as needed)

Garlic Yoghurt

  • ½ cup natural yoghurt of choice
  • 1 clove garlic, minced
  • ¼ teaspoon sea salt


Instructions

  1. Mix batter: In a large mixing bowl, combine the grated butternut squash, rice flour, eggs, sea salt, and finely chopped sage. Use a fork to thoroughly mix the ingredients until well combined and the batter is uniform.
  2. Heat oil: Pour 3 or more tablespoons of extra virgin olive oil into a large frying pan or skillet. Warm the oil over medium heat until hot but not smoking, ready for frying.
  3. Fry fritters: Once the oil is hot, add large spoonfuls of the batter into the pan. Use the spoon to shape each spoonful into neat, round fritters. Fry 2-3 fritters at a time, making sure not to overcrowd the pan to allow even cooking.
  4. Flip and cook: Fry the fritters until the bottoms are golden brown, then use an egg flip or spatula to carefully turn them over. Cook the other side until it also develops a golden brown color. Once done, transfer the fritters to a paper towel lined plate to drain excess oil. Repeat until all batter is used.
  5. Prepare garlic yoghurt: In a small bowl, combine the natural yoghurt, minced garlic, and ¼ teaspoon sea salt. Stir well to blend the flavors together evenly, creating a creamy garlic yoghurt sauce.
  6. Serve: Plate the warm butternut squash fritters and spoon the garlic yoghurt on top or on the side. Garnish with extra fresh sage leaves for added aroma and presentation. Serve immediately while warm.
