- 1.5 cups (360g) vanilla whole milk yogurt (or more as needed)
- 2 cups (270g) self-rising flour
- 1 cup (162g) chopped peaches, about ½ inch cubes
- Vegetable oil, for frying (2 inches deep)
Instructions
- Prepare the oil: Add 2 inches of vegetable oil to a medium saucepan or pot and heat to 350°F (177°C) over medium heat. Maintaining the correct temperature is key for proper frying.
- Make the batter: In a large mixing bowl, combine the vanilla yogurt and self-rising flour. Mix with a spatula until you have a smooth, thick batter with no lumps. If the batter feels more dough-like, add an additional 1/4 cup yogurt to reach a thick, wet batter consistency. Fold in the chopped peaches gently to coat them in the batter, preventing them from burning during frying.
- Fry the fritters: Once the oil is hot, carefully measure 1/3 cup of batter for each fritter. Use a spoon or small spatula to help release the thick batter into the oil, spreading it slightly in a circular motion. Fry in small batches (2-3 at a time) to avoid overcrowding and temperature drop. Maintain oil temperature at 350°F for optimal frying.
- Cook until golden: Fry the fritters for about 5-6 minutes total, flipping halfway through until they are dark golden brown on both sides and cooked through. Remove them from the oil and place onto a wire rack to drain and cool slightly.
- Serve and store: Enjoy the fritters warm, optionally dusted with powdered sugar or drizzled with a glaze. Store leftover fritters in an airtight container in the fridge or freezer and reheat before serving.
