Description

These Zucchini Rolls feature thin zucchini slices wrapped around a creamy filling of cheeses and herbs, then baked to golden perfection for an elegant and healthy appetizer or light main course.


Ingredients

2 medium zucchinis

8 oz cream cheese, softened

½ cup grated Parmesan cheese

¼ cup fresh basil, chopped

¼ cup fresh parsley, chopped

1 tsp garlic powder

Salt and pepper, to taste


Instructions

  1. Preheat oven to 375 °F (190 °C).
  2. Slice zucchinis lengthwise into 1/8-inch strips using a peeler or mandoline.
  3. Lay slices on a tray, sprinkle with salt, and let rest for 15 minutes to draw out moisture.
  4. Mix cream cheese, Parmesan, basil, parsley, garlic powder, salt, and pepper in a bowl until smooth.
  5. Pat zucchini strips dry. Spread about 1 Tbsp filling on each strip and roll up gently.
  6. Place rolls seam-side down in a baking dish.
  7. Bake for 20–25 minutes until edges are golden and filling is slightly bubbly.
  8. Let cool slightly and optionally drizzle with olive oil before serving.

  • Salting the zucchini before filling prevents soggy rolls.
  • Use a mandoline for consistent slices.
