Description
Zucchini Grilled Pizzas are a low-carb, gluten-free twist on classic pizza—grilled zucchini slices topped with tomato sauce, melted mozzarella, and fresh basil for a healthy and flavorful snack or appetizer.
Ingredients
2 medium zucchini
½ cup tomato sauce
1 cup shredded mozzarella cheese
¼ cup chopped fresh basil
1 Tbsp olive oil
Salt and pepper, to taste
Instructions
- Slice zucchini into ¼-inch thick rounds.
- Brush both sides with olive oil and season with salt and pepper.
- Grill zucchini over medium heat for about 3 minutes per side until tender and lightly charred.
- Spread about 1 teaspoon of tomato sauce on each slice, then sprinkle with mozzarella cheese.
- Return to the grill, cover, and cook for 2–3 minutes until cheese is fully melted.
- Remove from the grill and sprinkle with chopped basil.
- Serve immediately while the cheese is warm and gooey.
Notes
- For variations, top with pepperoni, olives, bell peppers, or sausage before melting the cheese.
- For a vegan version, use dairy-free cheese and replace basil with microgreens.
- Serve with garlic-parmesan aioli or pesto for extra flavor.
