Description

Zucchini Grilled Pizzas are a low-carb, gluten-free twist on classic pizza—grilled zucchini slices topped with tomato sauce, melted mozzarella, and fresh basil for a healthy and flavorful snack or appetizer.


Ingredients

2 medium zucchini

½ cup tomato sauce

1 cup shredded mozzarella cheese

¼ cup chopped fresh basil

1 Tbsp olive oil

Salt and pepper, to taste


Instructions

  1. Slice zucchini into ¼-inch thick rounds.
  2. Brush both sides with olive oil and season with salt and pepper.
  3. Grill zucchini over medium heat for about 3 minutes per side until tender and lightly charred.
  4. Spread about 1 teaspoon of tomato sauce on each slice, then sprinkle with mozzarella cheese.
  5. Return to the grill, cover, and cook for 2–3 minutes until cheese is fully melted.
  6. Remove from the grill and sprinkle with chopped basil.
  7. Serve immediately while the cheese is warm and gooey.

Notes

  • For variations, top with pepperoni, olives, bell peppers, or sausage before melting the cheese.
  • For a vegan version, use dairy-free cheese and replace basil with microgreens.
