Description

This 5-Minute Watermelon Feta Salad combines the sweet and juicy flavors of watermelon with the creamy, tangy feta cheese, topped off with fresh mint and a zesty dressing. Perfect for summer, this Mediterranean-inspired dish is a quick, no-cook option that’s both refreshing and satisfying. Easy to make, it’s a great choice for busy days or last-minute gatherings, and can be customized with optional add-ins like red onion, arugula, or toasted nuts.

Ingredients

Main Ingredients:

4 cups cubed seedless watermelon (about 1 small melon)

3/4 cup crumbled feta cheese (or cubed block feta)

1/4 cup fresh mint leaves, torn or chopped

Dressing:

12 tablespoons olive oil

1 tablespoon fresh lime or lemon juice

Salt and black pepper, to taste

Optional Add-ins:

1/4 cup thinly sliced red onion

1/2 cup arugula or baby spinach

Balsamic glaze, for drizzling

Chopped cucumber

Toasted pine nuts or pumpkin seeds

Fresh basil leaves (as a substitute or addition to mint)

Instructions

  1. Prepare the Watermelon: Cut the watermelon into bite-sized cubes and place them in a large mixing bowl.

  2. Add Feta and Mint: Sprinkle crumbled feta cheese and chopped or torn mint leaves over the watermelon.

  3. Whisk the Dressing: In a small bowl, whisk together olive oil, lime or lemon juice, salt, and pepper.

  4. Toss the Salad: Drizzle the dressing over the watermelon, feta, and mint. Gently toss to combine without breaking up the watermelon cubes or crumbling the feta.

  5. Chill or Serve: Serve immediately or chill for 15–30 minutes in the refrigerator for a more refreshing flavor.

  6. Garnish and Enjoy: Add optional garnishes like balsamic glaze, extra mint, or any other preferred add-ins just before serving.

Notes

  • This salad is best served fresh but can be stored for up to 2 days in the refrigerator. To maintain freshness, add mint and dressing just before serving.

  • Customize your salad with additional fruits, greens, or nuts for variety.

  • To make it a more substantial meal, consider adding grilled chicken, shrimp, or chickpeas.
