Instructions
- Prepare the salad vegetables: Place the corn kernels, quartered and sliced cucumber, halved cherry tomatoes, finely chopped red onion, chopped bell peppers, blanched and cut green beans, and chopped fresh herbs in a large mixing bowl.
- Make the dressing: In a small bowl, combine olive oil, lemon juice, red wine vinegar, Dijon mustard, granulated sugar, dried oregano, dried parsley, garlic powder, and salt and pepper. Whisk thoroughly until the dressing is well combined and emulsified.
