Ingredients
For the Sugar Cookie Bars
- 3/4 cup vegan butter, softened to room temperature
- 3/4 cup granulated sugar
- 2 tablespoons almond milk (or soy/oat milk)
- 1 tablespoon cornstarch
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
For the Frosting and Decoration
- 6 tablespoons vegan butter, softened to room temperature
- 2 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1-3 tablespoons almond milk
- Vegan-friendly food coloring (optional)
- Sprinkles (vegan-friendly)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking pan or line it with parchment paper to prevent sticking.
- Mix Butter and Sugar: In a large bowl, using a handheld or stand mixer fitted with the paddle attachment, beat the softened vegan butter and granulated sugar on high speed for 3-4 minutes until the mixture is light and fluffy.
- Add Wet Ingredients: Incorporate the almond milk, cornstarch, and vanilla extract into the butter and sugar mixture. Continue beating on high speed for about 1 minute until fully combined. Scrape down the sides of the bowl as needed.
- Combine Dry Ingredients: Add the all-purpose flour, baking powder, baking soda, and salt to the wet mixture. Mix on low speed until just combined, making sure to scrape the bottom and sides of the bowl to ensure all flour is incorporated.
- Transfer Dough and Bake: Evenly press the cookie dough into the prepared pan. Bake in the preheated oven for 12-15 minutes until the edges are lightly golden and the center looks set. Allow the bars to cool completely before frosting.
- Prepare Frosting: Using a stand mixer or handheld mixer, beat the softened vegan butter until smooth. Gradually add powdered sugar, vanilla extract, and 1 tablespoon of almond milk. Beat starting on low and increasing to high speed for 2-3 minutes. Adjust consistency by adding more almond milk if too dry or more powdered sugar if too wet, until frosting is spreadable.
- Add Color and Decorate: If desired, slowly mix in vegan food coloring until the frosting reaches your preferred shade. Spread the frosting evenly over the cooled sugar cookie bars. Add vegan sprinkles on top for decoration.
- Serve: Cut the frosted cookie bars into squares and serve. Enjoy these delicious vegan treats!
Notes
