Ingredients

2 ¼ tsp active dry yeast

¾ cup warm water

Instructions

1. Activate the Yeast:

  • Dissolve the yeast in warm water with a pinch of sugar. Let it sit for 5 minutes until frothy.

2. Prepare the Wet Ingredients:

  • In a large mixing bowl, whisk together sugar, eggs, milk, melted butter, and vanilla extract until smooth and creamy.

3. Form the Dough:

  • Gradually add flour and salt to the wet ingredients, mixing until a dough forms. Knead the dough on a floured surface for 5-7 minutes until smooth but slightly sticky.

4. Let the Dough Rise:

  • Place the dough in a lightly oiled bowl and cover with a clean cloth. Let it rise in a warm place for 1-2 hours or until doubled in size.

5. Shape the Beignets:

  • Punch the dough down, then roll it out to about ½-inch thickness on a floured surface. Cut the dough into squares or circles.

6. Heat the Oil:

  • Heat oil in a deep fryer or large pot to 350°F (175°C). Test with a small piece of dough—it should sizzle and rise to the top.

7. Fry the Beignets:

  • Fry the beignets in batches for 2-3 minutes per side, or until golden brown. Remove them with a slotted spoon and drain on paper towels.

8. Dust with Powdered Sugar:
