Ingredients
4 tilapia fillets (6 ounces each)
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (15 ounces) black beans, rinsed and drained
1 can (11 ounces) whole kernel corn, drained
1/2 cup Italian salad dressing
2 tablespoons chopped green onion
2 tablespoons chopped sweet red pepper
Instructions
- Drizzle both sides of the tilapia fillets with olive oil and sprinkle with salt and pepper.
- Preheat the broiler and set the fish on a broiler-safe pan. Broil the tilapia 4-6 inches from the heat for 5-7 minutes, or until the fish flakes easily with a fork.
- While the fish is broiling, combine the black beans, corn, Italian salad dressing, chopped green onion, and chopped red pepper in a small bowl. Stir to combine.
- Once the tilapia is done, serve each fillet with a generous scoop of the corn salsa on top.
