Description

Ingredients

4 tilapia fillets (6 ounces each)

1 tablespoon olive oil

1/4 teaspoon salt

1/4 teaspoon pepper

1 can (15 ounces) black beans, rinsed and drained

1 can (11 ounces) whole kernel corn, drained

1/2 cup Italian salad dressing

2 tablespoons chopped green onion

2 tablespoons chopped sweet red pepper


Instructions

  1. Drizzle both sides of the tilapia fillets with olive oil and sprinkle with salt and pepper.
  2. Preheat the broiler and set the fish on a broiler-safe pan. Broil the tilapia 4-6 inches from the heat for 5-7 minutes, or until the fish flakes easily with a fork.
  3. While the fish is broiling, combine the black beans, corn, Italian salad dressing, chopped green onion, and chopped red pepper in a small bowl. Stir to combine.
  4. Once the tilapia is done, serve each fillet with a generous scoop of the corn salsa on top.
