Ingredients
Salmon
- 2 salmon fillets (approximately 6 ounces / 175 grams each)
- Salt and pepper, to taste
Crust & Sauce
- 1 clove garlic, minced
- 1 tablespoon olive oil
- ¼ teaspoon Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- ⅓ cup pistachios, coarsely chopped
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the salmon.
- Prepare Salmon: Rinse the salmon fillets under cold water and pat them dry thoroughly with paper towels. Place the fillets skin-side down on a parchment-lined quarter sheet baking pan. Season both sides evenly with salt and pepper to taste.
- Make Sauce Mixture: In a small mixing bowl, combine the minced garlic, olive oil, Dijon mustard, freshly squeezed lemon juice, and honey. Mix well until all ingredients are incorporated.
- Apply Sauce to Salmon: Spread about three-quarters of the sauce mixture evenly over the top of each salmon fillet, ensuring full coverage for flavor.
- Prepare Pistachio Crust: Add the coarsely chopped pistachios to the remaining quarter of the sauce mixture in the bowl. Stir well to combine the nuts evenly with the sauce.
- Top Salmon with Pistachios: Spoon the pistachio mixture onto the top of each salmon fillet, pressing lightly with the back of the spoon so the mixture adheres to the fish.
- Bake Salmon: Place the baking pan in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Rest and Serve: Remove the salmon from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute for a moist and tender result.
Notes
- Ensure pistachios are coarsely chopped to retain a good crunchy texture in the crust.
- Do not overbake; salmon should be flaky but still moist inside.
- You can substitute honey with maple syrup if preferred.
- Serve with a fresh green salad or steamed vegetables for a balanced meal.
- To remove the skin easily, you can cook the salmon skin-side down as directed, then it can be peeled after cooking if desired.
